Notes : Mentioned as early as 1264, the Strasbourg bakers' guild was one of the city's oldest and most influential, guaranteeing the quality and distribution of bread. Powerful during the Middle Ages, it symbolized local craftsmanship through the pretzel. Suppressed during the French Revolution in 1791, it was reborn in the form of unions and federations in the 19th century. Today, the profession remains organized around the Fédération des boulangers du Bas-Rhin, perpetuating the traditions and reputation of the Strasbourg craft.
